San Juan Capistrano's Next Coffee Shops Are Being Built Away From Los Rios

In 2015, a coffee shop on Rancho Viejo Road opened as Coast Coffee and Tea. Then one night the sprinklers went off, and the shop spent three weeks in repairs. When it reopened, owner Tim Liao put up a sign that said "Tim is making great coffee again." The Orange County Register reported that customers liked the sign so much that it became the shop's name.

That name came about by accident, and the next one is planned. Liao announced that Tim Is Making Great Coffee would close on Oct. 22 so the space can be renovated. His plan is to bring it back as something quite different. Over on Del Obispo Street, a second new cafe is under construction with its own strong theme. San Juan Capistrano's newest coffee shops are being designed as places to drive to on purpose, and they're going up along the city's commercial roads. The everyday cafes that have been here longest are still clustered around Los Rios Street and Camino Capistrano.

A shop named by accident gets a name on purpose

The new concept is called Darkside Coffee. The Register describes it as a Japanese sci-fi-inspired spot from Liao and his business partner Chris Schaffner. It will run as two businesses in one space at 31431 Rancho Viejo Road:

  • By day: a Japanese-style coffee bar serving breakfast, with planned hours of 7 a.m. to 2 p.m.
  • Thursday through Sunday evenings: omakase seatings, where the chef picks the meal, focused on high-end sushi and sake. Liao described the feel as a "speakeasy."

Liao told the Register he plans to keep the omakase low-key and share the tasting menus quietly instead of advertising them widely. The renovation is meant to give the room a lounge atmosphere. Liao is aiming to reopen in early February 2027, after about three months of work.

Changing the name wasn't an easy call. Tim Is Making Great Coffee ranked No. 10 on Yelp's list of top U.S. coffee shops in 2022 and No. 21 in 2025. That's two national top-25 finishes three years apart, for a shop in a center on Rancho Viejo Road. "It's a tough call because I'm changing the name," Liao told the Register. He also explained the bigger goal: "We're trying to bring more colorful places to the area."

So a shop that built a national reputation on coffee is coming back with a theme, a dinner service and a lounge. That's the first sign of where San Juan Capistrano's coffee scene is heading.

The second newcomer has a theme too

The second sign is at 32382 Del Obispo St., Suite C-1, in the Vermeulen Ranch Center. That's where Colin Dubel and Chelsea McCrea are building Wade's Coffee House, which they bill as California's "first and only honky tonk coffee shop." The Capistrano Dispatch broke the story first, and the Orange County Register followed up in October.

The Register lists what the owners have promised, citing the cafe's Instagram:

  1. Country music
  2. "Strong coffee"
  3. Leather seats
  4. An outdoor patio
  5. "Nashville vibes"

Kids and dogs will be welcome. The Register also noted that Wade's will have free, ample parking, which it called "an increasingly rare San Juan Capistrano feat." As the Register reported, Dubel said on Instagram that the couple "had an idea that we could not stop thinking about, so we decided to go all in and build it." The site was still under construction in early October, and the opening is set for winter 2027.

Wade's and Darkside are in shopping centers on Del Obispo Street and Rancho Viejo Road, and each opens with a strong identity, Nashville honky-tonk for one and Japanese sci-fi for the other. Each also offers something beyond the cup. Darkside adds evening omakase, and Wade's leans on its patio, its welcome for kids and dogs, and its easy parking. They're designed to give people a reason to make the trip.

Where the everyday cafes are

The cafes that are already open sit in a much tighter area. Most are within a short walk of one another near Los Rios Street and Camino Capistrano, each with its own character.

Hidden House Coffee, 31791 Los Rios St. This is the coffee-focused option inside the Los Rios Historic District. The company says it sources much of its coffee directly and roasts it at its own roastery in Santa Ana.

Ellie's Table at The Egan House, 31892 Camino Capistrano. This cafe is in the historic Egan House near Los Rios. Coffee comes with scratch-made breakfast, lunch and baked goods, so it's a good choice when a morning coffee might turn into a meal. Its listed hours run Tuesday through Sunday.

True Love Coffee Co., 32122 Camino Capistrano #100. True Love's website describes traceable coffees roasted with a focus on the farmers who grow them. A January 2026 profile in the San Juan Hills High School student paper highlighted its enclosed patio as a family-friendly spot. That patio covers some of what Wade's plans to offer later in the winter.

Ubuntu Café, River Street Marketplace, 31888 Paseo Adelanto, Suite 100. This all-day cafe serves globally influenced food made with locally sourced, organic ingredients. It's open daily.

Ramos House Café, 31752 Los Rios St. Ramos House is a brunch spot more than a coffee bar. It serves à la carte meals on weekdays and a two-course brunch on weekends, so plan on a sit-down meal rather than a quick coffee.

Taken together, the historic core covers a lot of ground. Hidden House roasts its own coffee. Ellie's Table pairs coffee with full plates, True Love has an enclosed patio, and Ubuntu runs all day. Ramos House handles the long weekend brunch. What these cafes share is location. They sit close together in the part of town that draws visitors to Los Rios and the Mission, where Wade's free parking would stand out.

The winter calendar, in order

With two openings due in early 2027, here's the timeline from what the owners have said publicly:

  1. Oct. 22, 2026: the date Liao announced for closing Tim Is Making Great Coffee before renovations.
  2. Between now and the reopening: Hidden House, Ellie's Table, True Love and Ubuntu are all near Los Rios and Camino Capistrano, within a short walk of one another.
  3. Early February 2027: Liao's target for reopening as Darkside Coffee, with 7 a.m. to 2 p.m. coffee and breakfast and omakase Thursday through Sunday evenings.
  4. Winter 2027: the expected opening of Wade's Coffee House at Vermeulen Ranch Center.

Both opening dates are the owners' targets, and the dates may change. Darkside's Thursday-through-Sunday omakase will be the first of these new evening options to watch for. Wade's patio with dogs welcome will be the second.
